Another tip is that you can freeze egg rolls at the stage just before you're ready to fry them. Just be sure you freeze them on a tray so they're not stuck together, then you can store them in a ziploc. That way you can make a huge batch and fry up a few at a time as you want to eat them. If you're going to take the time and effort, you might as well make a lot. When you fry them, just fry them frozen. Don't defrost them first.
