Now add the pretzels to the butter, mix them up, and press them to the bottom of the pan. Bake for ten minutes, and let cool.

 





You can cool the crust in the refrigerator if you'd like it to be ready more quickly.

My Step grandmother use to make Cherry Cheesecake on a pretzel crust. OMG! Awesome. One of the few good memories I have of that women. The rest are awful.

Mmm...cherry cheesecake. My grandma made that with a graham cracker crust. I loved that that woman.

I have things like that. Tuna Casserole makes me think about her too, but she had a tough love side to. It evolved being tied to the chair for dinner.

I am sorry to hear that. It reminds me of another story... but I don't know how much everybody else wants to learn about the old boss of my dad...




Next up is the cream cheese step!

Beat cream cheese and sugar until combined.  Using an electric mixer is a good way to do this, or a stand mixer. By hand works too if your elbows are strong!




Then, more slowly, fold in the cool whip.

OMG! I love cream cheese mixed with sugar too. I can eat that off the spoon too.

Reminds me. I made some stuffed meatloaf last week with provolone and cream cheese with chives. It was really good. I love stuffed meatloaf.

Just in case anyone is wondering.

You can do this with any fruit flavored jello.

Peach, blackberry, cherry, strawberry, melons. With the melon you'll want to make a puree first.

Never use fresh pineapple in jello. The acidity keeps the jello from congealing.

Now we can start making the jello topping.
Follow the usual jello instructions of dissolving the jello powder (which already has sugar in it) in boiling water.



Now add your raspberries.
Stir to thicken slightly.




And Stormy is totally right about this working with any flavor of jello. The texture of raspberries is really nice, for sure, though. Would you freeze the other fruit, too, before using them?

I usually buy the bags of already frozen fruit. If you get the mixed variety - the one with peaches and grapes and melon balls you can use the melon balls that way. If you are wanting to use fresh fruit, make a puree first. Or freeze them. It's really up to you.
