Pyrex is a brand, not a type of material. But yes, both are borosilicate glass.

Turn the dough out onto your counter, and sprinkle a bit of flour around to keep the dough from sticking.





Knead for about ten minutes. You will notice, as you knead (pressing, flipping, folding the dough) that it will become silky, and start staying together better.

You can really tell a difference in texture between the first picture and the last picture!

When my husband built our dining table, he made it higher than an average table so that it would be more comfortable for me to knead dough on.

That's so sweet! Our house came with a marble island when we bought it. The base is just a wire frame, though, so it's not sturdy enough for me. I'll have to have hubby stabilize it before Fall gets here.

As the dough feels like it's done, oil a bowl, make a ball of the dough, and turn it in the oiled bowl a few times so the surface of the bread won't dry out while it rises.




Cover it with saran wrap or a damp cloth and let it rise until doubled, which at this time of year is just under 90 minutes.

I have some pretty linen tea towels for this reason. OK, when I'm lazy it is plastic wrap.

I had actually left my linen towels at a friend's house where we were making cheese... whoops so it was saran wrap for me too.
