Okay, give me three minutes to type it up...

The filling:

4 cups rhubarb- cut in 1/2" pieces
1/3 cup flour
1 1/2 cup sugar
pinch nutmeg
2 beaten eggs
1 T milk
1 T buter.
Arrange rhubarb in unbaked pie crust.
Mix flour,sugar & nutmeg. Add eggs and milk. Mix well. Pour evenly over rhubarb.
Dot with butter.
Place crust over top (lattice if you like).
Bake at 400 deg. for 50-60 min.
Sprinkle sugar over top crust before baking.
Use foil on the edges for 20 minutes at start or at end of baking time.


The crust:

makes 2 crusts:
2 cups flour- measure then sift
1 tsp. salt
5/8 cup oil (mazola)
Blend oil into flour and salt. Mix thoroughly.
Add 4 Tbsp. cold water- one at a time
Roll 1/2 at a time using wax paper. Peel top piece off. Invert into pie pan.
Peel off bottom.



It is. The. Best.

I'll be running out to the market to pick up some rhubarb first thing tomorrow to try this and the sorbet!

Thank you all so much for coming to this meeting! I think the recipe-building activity was super fun, and I hope you all go and try making a sorbet or two that struck your fancy.

For next month, I know we're having an Olympics theme, so start thinking about recipes that show off your cultural heritage!

I will put up a couple of threads as brainstorm starters in the next few weeks, and I hope you can come to August's meeting too

I am very excited about the Olympics, I have a friend who is there! I can't wait to see how well he does.

Me too! And my dad is always on the hunt for a good bread recipe. I'd love to be able to show him something in the kitchen for a change.
