Then we have the apple pie.

Pies are one of those territories where everyone seems to have a die-hard conviction about the Best Way---and far be it from me to choose sides or say there's one right way or any wrong way! (Well, one of my aunts ran out of apples halfway through a pie once, and tried to make up the difference with a can of creamed corn---that was the wrong way.) But generally, as far as type of fat, type of liquid, type of flour---whatever works for you is just fine. I'm going to share the easiest, most reliable recipe I've found. It's a vegetable-oil based pie, which means it's good for vegans and vegetarians as well as people with non-restricted diets, *and*, if you mess up while you're rolling it out, you can pack it back into a ball and start over. Most pie crust recipes are not so forgiving!



Antipova's Great Grandma's Pie Crust
makes 2 crusts:
2 cups flour- measure then sift
1 tsp. salt
5/8 cup oil (Wesson)


Blend oil into flour and salt.  Mix thoroughly.



Add 4 Tbsp. cold water- one at a time



Roll 1/2 at a time using freezer paper or plastic wrap. Peel top piece off.



Invert into pie pan.
Peel off bottom.



You may want to cover with foil for the first 2/3 of baking time. The pie will bake for about 45 minutes (check on it occasionally) in a 350F oven.

Trivia: The name "canola" was coined for a descendent of rapeseed because of PR purposes (do you want to fry in rapeseed oil?) in 1978. "Canadian oil, low acid" was combined to come up with Canola---much nicer on modern ears than the older variant ("rapeseed" descended from the Latin "rapum," which meant turnip. Rapeseed is a relative of the turnip, rutabaga, cabbage, and other members of the Brassica family.)

Male turkeys are often referred to as Tom Turkeys for two reasons. One is that it's more politically correct than calling it a cock (females are hens). The other is more gossipy, and rumor has it that Ben Franklin was mad that Thomas Jefferson opposed his idea to have the turkey be the national bird of the country, so he jokingly called it a “Tom turkey” after Jefferson.

In terms of the raw berry, or in terms of the sauce?

For the sauce, as the sugar begins to caramelize the sauce will rapidly turn from a bright pinkred to a darker and darker purple. The caramelization makes the sauce taste darker and a more mature sort of sweet---but it's easy to take it too far.

In terms of the raw berries, generally the redder, the sweeter---and the shorter the shelf life. Which is why you freeze them!

I just use a cast iron grill pan, toss the asparagus in a little olive oil, salt, and pepper, and throw the spears on the heated pan with no other oil. Sometimes I'll also finish them with a squeeze of fresh lemon as I take them off. This is the type of pan I use:

Oh I have a cast iron pan but not one with the raised up grills. Hrm maybe Ill try it still.

We actually make zucchini pie much more frequently than apple pie and actually prefer it. We cut up zucchini instead of the apple, then mix in concentrated apple juice in with the other ingredients to make the filling.

Wait, it's Thomas Jefferson's fault that the turkey's not our national bird!?
