Next step: peeling the eggs.



Before peeling the eggs we need to cool them down, and I find that leaving them in the pot and pouring out the hot water and running cold water over them to be the easiest solution. I also use this time to gently crack all of the eggs all over which helps with the cooling and with the peeling.

I find that removing the inner membrane along with the cracked shell in one go makes it easier, but sometimes all your efforts fail and the egg ends up looking a bit homely. It’s okay. Still tastes fine that way, too.

Fun Fact: Hard-boiled eggs peel best if the egg is at least several days old if not a week.

Oh true, true. I canned a bunch of orange marmalade in January. Enough to last a family of 6 for a year off of one tree at that. It help because I am tring to get the older kids to eat healthier and they have been helping with the garden, so they are excited about the tomatoes and bell peppers and stuff.

oooh, I never thought of cracking the shell before it cooled.... my eggs always end up homely looking, so i make egg salad instead lol

I love brown eggs. I want to get chickens but the Mr says enough is enough with the garden and stuff. We live downtown

Nope, plain ol' chicken eggs. Duck eggs have a larger and richer yolk, if I remember correctly.

I'm guessing those are just brown chicken eggs (my sister raises chickens that lay green eggs). Duck eggs do taste different, though, albeit not remarkably so.

Making marmalade is so fun. It's really impressive to me how the pectin is actually in the seeds of the orange, ready to go!

Aren't most store bought eggs at least a week old already? When we sail we keep them in the galley because they stay good for at least a month, so I assume they're not being rushed to supermarkets daily.

thats because most store sold eggs only sell the white ones because supposedly the consumers think the brown ones were dirty

That would make sense, but we wait as long as we can regardless, because it's hit and miss with the ones you boil that you get right from the store.

And they don't taste different at all. Commercial vs. free-range eggs taste different, but commercial brown and commercial white taste no different.
