That's awesome. It's all about keepin' it fresh, hey?

I add minced garlic and ranch instead off all mayo. I also top with cayenne instead of paprika. It is on the challenge for this month. That is how mom used to make them and they are different but great when you are bbqueing sausage and things like that.

Hard to go wrong with adding cayenne to much of anything.

I'm actually growing some cayennes this year to make some home-made hot sauce. I just ran out of the stuff I made two years ago.

Its like I learned as a child to make baked potato salad instead of traditional potato salad. Southern thing I guess.

That's something I've yet to try. I really should give it a shot.

Hey all this cayenne talk reminds me of this simple little dish my friend's mom used to make. It's just cottage cheese mixed with some cayenne and minced chives, wrapped in a romain leaf. It sounds weird but it is really yummy and unexpected.

To get the filling back into the egg whites, I usually make a sort of pastry bag out of a small zip-top bag. Scoop the filling into the bag, working it down towards one corner like in the picture above. Next, cut off the corner with a pair of scissors to make a hole a bit smaller than the part of the egg white to be filled. Pipe the filling into the egg whites. Sometimes a bit of excess water is on the plate or the egg whites, making them slide around on the plate. This can be solved by putting a piece of paper towel under them while filling them.

Fun Fact: The term “deviled” when related to food first emerged in 18th century England and referred to any food cooked or seasoned with hot spices or condiments such as mustard or cayenne pepper.

I'm enjoying the fun facts.

I just scoop the filling and deposit it with a spoon. Never tried the pastry bag style.

I just throw a bunch of stuff into it until it tastes good.

Last time I think I smoked half the peppers, and combined it with apple cider vinegar, onions, garlic, ground dry mustard, salt, black pepper, some sugar...maybe something else, I don't recall. Then I cooked it, pureed it, and bottled it. It was pretty tasty.
