Yeah the name is a turn off but it is deer. I never had deer meat.

Lie to them. Tell them it's beef. That's what we had to do when my daughter first started watching them and was offended by my use of the word "Bambi"

I suppose I could do that, but then if they ever found out. My father did that to me when I was younger, when I found out I cried.

Welcome to the first meeting of Eden Cooks

During tonight’s meeting, I’ll be sharing a recipe I’ve made for roast squash soup. I’ll give some tips on alternative methods of pureeing the soup if you haven’t got an immersion blender, and there’ll be a contest for a $25 Eden gift card where you’ll have to guess what the kitchen gadget is in the pictures I put up at the start of that contest. ALSO, today I was told that I could give away a second $25 EF gift card so we’ll work in some trivia as well.

First I’ll give you the list of ingredients and then I’ll walk you through the recipe with lots of pictures

Ingredients:
1 medium butternut squash, peeled and chopped into 1inch pieces
1/4 c. veggie oil
1 tsp. kosher salt

4 c. (one box) chicken broth, unsalted is better
1 large or 2 small bay leaves
1/2 tsp. ground sage
1/4 tsp. cinnamon
1/8 tsp. allspice
1/8 tsp. freshly grated nutmeg

1 can unsweetened coconut milk / 1 - 14oz. block of silken or soft tofu, pureed / 1 cup heavy cream
1 Tbsp. maple syrup/honey/brown sugar

(I like to give people a lot of options for making the recipe their own. It’s probably because I am so bad at following recipes myself. I’ll provide a list of all the alterations that I recommend as well as a full recipe on the Eden Clubs blog after the meeting.)

Just a quick question, would you be able to substitute vegetable broth for the chicken, for those of us who don't eat meat? ^_^

Veggie broth, mushroom broth, or water if you don't have anything better.

I use coconut milk in seafood soups, but I hadn't considered matching it with squash.
