As a steak or hamburger, it is best rare. It has hardly any fat, so it over cooks quickly. It is a sweet tasting meat. I would probably prefer not to cook it as a roast, since you will have a more difficult time achieving consistant results. If you don't cook it just right, you can substitute it for a pair of shoes which require resoling.
