I make my own BBQ sauce, the recipe is not defined but includes:
-Tomatoes (usually from our own garden)
-Chilis (vary type and amount according to taste)
-A touch of chocolate
-A touch of cinnamon
-A touch of ginger
Blend/puree the tomatoes, cook down until it's pasty, blend and cook again, add spices to taste.
Haven't ever made jerky, but would like to give it a shot sometime. Have definitely had some luck making sausage though!
