Homemade Jerky, Sausage, Barbeque Sauce.......

I just finished making about 25 pounds of homemade jerky and then made and canned 30 pints of my barbeque sauce. This is the first year I have pre-made my sauce, usually I mix it up real quick when we are cooking our meat. So--this got me started thinking:
--Do you make your own jerky, sauce or sausage?
--Small batches or large ones?
--Any recipes you want to share?
--Store bought, deli or homemade; which do you prefer?

I used to make beef jerky, but now that I am a vegetarian I do not. We usually made quite a bit of it at once because our family would buy a 1/4 of a cow every year so we'd make several pounds of jerky.

I've never made homemade jerky!!! How do you do it? I always just buy it as I rarely get a craving for it.

As for sauces, I live by myself so it doesn't really work all that well to make canned items. Which amkes me sad. But whenever I go to Canada for the summer my mother and I usually spend a week or two canning pretty much everything from sauces to jellies to fruits and veggies. But I never get to eat it.

I don't make anything like that because I live in a tiny apartment and have nowhere to place to store so much food and no one to share it with. I wish I could, because I love cooking and homemade always tastes better.

My dad used to make homemade jerky. It was awful!! I guess that turned me off of jerky making.

We made homemade jerky when I was younger, and I LOVED it! I haven't made it in years though... I need to dig up that recipe!

I make my own BBQ sauce, the recipe is not defined but includes:
-Tomatoes (usually from our own garden)
-Allspice
-Salt
-Pepper
-Vinegar
-Brown Sugar
-Chilis (vary type and amount according to taste)
-A touch of chocolate
-A touch of cinnamon
-A touch of ginger

Blend/puree the tomatoes, cook down until it's pasty, blend and cook again, add spices to taste.

Haven't ever made jerky, but would like to give it a shot sometime. Have definitely had some luck making sausage though!

We make tons of jerky during the winter. We only make deer jerky though. I don't make sause though. I would love to learn!
