Well, I don't know about that, I just think you should check it frequently after the first week to see how it's going. If you're only using black peppercorns you shouldn't have too much of a problem, I was just envisioning a mixture of peppercorns before I went back to find your original post.

I think I'm going to try a couple flavors and then see how well they combine. Do a full tasting! I'm pumped!

Hmm, how well do you think grapes would infuse? And should I probably poke some holes in them before plopping them on thru the top of the jar?

I mean, it may just be psychological but I kind of think that MOST of my infusions are better.

I think that having ingredients go from making my cutting board sticky to floating in my vodka to being consumed in under a week means that it just tastes better, especially when I know that my ingredients are all natural and not being hyperprocessed.

This is not to say that I haven't made some god awful infusions, but if nothing else, mine are made with love and love tastes delicious.

You should try out for fear factor. Sounds like you already have lots of practice for the eating-gross-stuff part.

Do you have any recommendations for fruits that *shouldn't* be used in vodka infusions?

Ever tried any fruits that didn't work out, or combinations that sounded good but didn't go as well as planned?

Mmm grapes. I think they would infuse well, but are probably a more subtle flavor.

I would probably cut into the sides (gentle slice, just cut the skin on two sides, maybe) before I plunked them in.

Oh my gosh, the biggest lesson I've learned?

MAKE SURE YOUR FRUIT IS RIPE BEFORE YOU INFUSE YOUR VODKA.

Seriously.

I did an infusion with peaches, but I didn't taste the peach until I'd already put half of it in vodka.


Second big rule is making sure you have enough vodka to finish your infusion.

That was the first mango infusion.


As for things that shouldn't be infused together... Well, I think that if you're infusing two flavours, you should start the infusion with the gentle flavour, let that go on its own for a few days and THEN add another ingredient. My kiwi strawberry wound up being very strawberry and very little kiwi because of that.

But there's nothing I'd say, "DON'T TRY THIS AT HOME!"
