My favorite fancy vegetable is artichoke, boiled and dipped in butter. I don't eat that super often though. My favourite more day to day vegetable... potatoes and swiss chard.

I love acorn squash. I cut it in half and fill the gap where the seeds used to be with a little bit of melted butter and brown sugar, and then I bake it for about an hour at 375 degrees. It is fantastic!

Tomatoes (and before anybody goes "That's a fruit!" I'll let you know right now that they technically qualify as both). They're one of my favorite things to eat.

I like just about any cooked vegetable, with a few exceptions (Brussels sprouts, asparagus, and cauliflower come to mind - bleh!). If I had to pick a few other favorites, I'd say potatoes, broccoli and corn are near the top of the list.

I believe that, in the culinary sense, they are typically counted as such.

Interestingly enough, they're not plants. They're fungi. Which makes it fun to think about how far we might be able to stretch the word "vegetable."
