I have multiple food allergies as well as intolerances.
I have a dairy allergy AND am lactose intolerant, they are two TOTALLY different things.

means the immune system thinks the proteins in the food are "foreign invaders" and will cause harm, so it mounts a defense by releasing histamine....which can harm or kill the person in the process.
Celiac is actually a form of intolerance
to gluten (one which I do not have) and is not
an allergy at all, as the immune system is not involved and a histamine reaction is not launched. Although someone can be allergic to wheat or rye or oats. Celiac causes the villi in the intestines to become damaged and lie down flat so that NO nutrition can be absorbed. It, if real, will usually cause malnutrition and can kill a person who isn't aware of the condition, usually before the age of 25 or so. It is NOT, however, (as it seems to be the "Disease Du Jour") all that common, and is only usually diagnosed by taking a biopsy of the intestinal villi.
