I usually prefer a more mild cheese if I am just eating it, but I do like sharp cheddar when making macaroni and cheese.

My wife doesn't like to eat too much dairy, either. She likes tofu cheese that comes in slices like American. It tastes pretty good, definitely better than the "processed cheese food" stuff.
