KC style - smoked with hickory, vinegary sauce on the side, burnt ends are an option on the menu.

Needless to say, I am a devotee of Arthur Bryant's and Gates and Sons when in Kansas City.

I honestly don't know the details of each style. We most often use a 'wet' sauce which I believe is the NC variety - but the others are fine - even Korean as Kev suggested.
