It really depends on the toy. I've got a few realistic toys that are "hes," but most are "its." I don't usually think of them as "shes."

All my strokers are 'she's', all my other toys are 'it's'. My only realistic dil is still affectionately refereed to as she or Ronda (Randy VixSkin). I do have one 'he' but I do not use him for masturbation, he is just a prop I use for video's and work shops etc..
