How do you prefer to cook your pasta? I generally use EVOO while cooking mine. Weirdly enough I know a lot of people who use just the water to boil them in. But I love EVOO and makes the pasta cook much better and tastier in my opinion.

I typically just do water... but to be honest, if I have kitchen helpers I usually have them take charge of pasta. Lets my mind focus on the other things.

In terms of substitutions, this sun-dried tomato alfredo is pretty compatible with most people's dietary restrictions.

Of course, it's extremely heavy on the calories. Alfredo sauce is not a diet meal. If you're hoping for something that's amenable to weight loss, I'd just eat some pasta with some cottage cheese and tomatoes, rather than trying to adapt this recipe. The sauce won't work without the butter, cream, and cheese.

There are some easy substitutions, though:

For a |gluten-free guest, simply use rice pasta instead of wheat pasta.

For those who don't like the flavor, or have |onion or garlic allergies, onions and garlic can be omitted with no negative effects.

If you get parmesan processed with "vegetable rennet" instead of regular rennet, this is already vegetarian. It is also fine for kashrut eaters, it falls in the milchig class. (No lard in the pie crust for dessert and you'll be fine.)

Commonly cultivated avocados are from one of three varieties: West Indian, Mexican, and Guatemalan. West Indian avocados like humid weather and freeze at 32F, while Guatemalan types grow in high altitudes and can be hardy down to 26F. Mexican types grow in subtropical plateaus, and can survive temperatures as cold as 19F.

Kitchen helpers must be nice, I never have any of those haha. But makes it more challenging and fun in the kitchen. I have not cooked as much lately, I really need to start doing it again.

Darn right! Cooking is super relaxing for me, I would have a hard time going without cooking for too long at a time.

Usually just poor some out of the bottle. I'd say the EVOO averages 2 tablespoons for a large batch of pasta. Usually 1 tablespoon or less for 1-2 servings. Depending on the recipe I may add a very light drizzle of EVOO on the prepared dish afterwards.

Another type of oil I have been enjoying lately is stuff that we carry at my workplace. It's a blend of EVOO and Canola oil infused with garlic and mmmm mmmm mmmmmmmm is it good. I love to make homemade pizza and baste the crust with it.

First up, get some water boiling. The pasta will take longest to cook, so bring a pot full of water to a boil and, after it does, add your noodles. While the water is coming to a boil you can cube the avocados and begin the sauce.





Avocado trees put out flowers in January and March.

If you're cooking alone, cut up the avocados next. If you have helpers for stirring, you can start making the alfredo, and leave your helpers to stir while you're cubing... but in case you're doing all the fun work yourself, I'll show my avocado cutting technique here.

We never ate avocados grown up, so once I learned how delicious they could be (thank you, guacamole!) I just tried to mangle my way through them, sometimes getting fancy enough to make slices, but usually just scooping bites out with a spoon. It was about the same story for mangoes, but the restaurant/bakery I worked at in college served mango scones. I wondered and wondered how they could cube the mangoes... until I sat down and figured this out. Now both mangoes and avocados can be easily and prettily served.

Maybe some of you already knew this---but it was a big development for me and my cooking, and since some folks here haven't had avocados before, I thought I'd share!

Cut the avocado in half---you'll hit the seed halfway through, just slice around it and twist the halves to separate them. Then pop out the seed.

Now take your two seedless half-avocados, and cut a checkerboard pattern into them with a knife. Cut all the way down to the skin, but don't cut through the skin.

Now press your fingers into the center of the avocado's skin, holding the edges still with your thumbs. All the little cubes should pop out, and you can pull them off the skin with your fingers. So much prettier than the mangled messes I used to make!




Avocado trees will only product fruit if they are grown in full sun---but they also need to be protected from strong winds, which can easily damage their branches.

I used to mangle them too, till I seen an episode of Martha Stewart where she explained how to cut them like that. haha
