I oven roasted it last night and it was great! It has a Sea Bass kind of meatiness to it, with no fishy taste. Very nice fish! I'm planning to pan sear it next time!

I like to poach Monkfish with chicken or vegetable broth, a dash of sea salt, and lots of fresh sliced lemon; it keeps the texture tender and moist.
