Chicken leg quarters have been marinating in coconut milk, evaporated milk, curry powder, tandoori powder, and dried mango strips. I'm baking them now at 400 for an hour or so with green cardamon seeds.

...we'll see how it turns out.

I was going to try rabbit for the first time tonight, but I opted for a quick salad instead. I just wasn't in the mood to cook tonight. Besides, my girlfriend is the real cook, and we're not together tonight, so it kind of took the fun out of cooking. Sappy, but true.

I spent all day yesterday making a pork tenderloin in mushroom sauce. I served it with homemade mashed potatoes and green beans. It was fantastic! Tonight it's chicken and broccoli alfredo!

No meat today. We were both raised Catholic. Albeit, we aren't very good Catholics, old habits die hard.

I'm making meat free minestrone tonight and if I have time, I'll make home made dinner rolls or biscuits.

The soup will have in it: Vegetable stock, tomato or vegetable juice, a can of tomato sauce, carrots, potatoes, herbs, spinach, cannolini beans, (white Italian beans, My Man put kidney beans in his cart at the supermarket yesterday and good thing he called me to check. Only cannolini beans will do for authentic minestrone) olive oil and garlic and maybe a little onion near the beginning of cooking. Then zucchini and petite peas near the end of the cooking cycle. Some white wine, and of course then some left over pasta from a day or so ago and I'll serve it with bread, rolls or biscuits.

I am making my homemade potatoes that my husband loves, and we are having leftover chicken with it!
