Hey Kristi ! Nice to see you around again! I have roasted stone fruits with success, but nothing else. I did it because the grill's smoke gives me a headache, so I was seeing what else would work. I used a silicone sheet pan (silicone stretched on a metal frame) and sprinkled a little sugar down first, then put some cut side down and some cut side up, then put another tiny sprinkle of sugar. They caramelized nicely and were good. However, I discovered I don't like the taste of cooked peaches as much as fresh. (I always wondered why peach pie didn't taste 'right' to me). The plums and apricots were great though. Those taste good to me when heated, go figure.
