I did brunch every st patty's for my friends, so that they could have at lest one good meal. It was typically candied bacon, scrambled eggs, toast, maple syrup breakfast sausages, french toast and rainbow-colored mini beer pancakes (everyone got a whole stack of the rainbow). Sometimes my friends would bring things too - we had jam-stuffed French Toast one year, and usually someone would pick up croissants. It was a lot of fun and I wish that I had plans this St. Pats so that I'd have an excuse to do it again.
