Sorry to have missed this poll... :-(
I like my red meat cooked medium-rare, especially red meat and pork and at home it comes out just perfect.
At a restaurant I order my red meat medium rare because by the time its delivered and still cooking on the plate its served to me just perfectly there to! It also gives me a chance to have them cook it another minute or two should I find it not quite done enough which rarely happens.
Fish is the same way as is chicken and other white meat, I like it as well moist, tender and juicy so I can still taste its succulent flavor.
