No real questions - I need to find my recipe book. I use "Anybody Can Cook" by Gwen French if I remember right. Its from the 30's or 40's I think...each recipe is given like a formula and then you can make substitutions...really interesting. I'll have to find it and share a sample recipe.

When potatoes are first harvested, they are kept at high humidity for two weeks. Then they are kept at about 5 degrees C.
