What fats do you use in your kitchen?

Extra virgin olive oil for seasoning, rice bran oil for cooking. I do use butter once in a while, but try to avoid it as much as possible.

I have olive oil almost everyday on raw spinach. I live in a city that has a store that sells flavored olive oils. Makes eating salads a lot more enjoyable!
