So the sorbet recipe is very flexible! At the end of the meeting, we'll all throw out a few flavors, and we'll all brainstorm how we'd make a recipe for them!

Rhubarb is native to China, and was introduced to Europe via Russia. It was traditionally used more for medicinal benefits (the root is a laxative). Its first recorded use as a food (eating the petioles in pie) in 1778, though it was first planted in 1608.

Am I too late? Popping in for a while to observe. Still getting the hang of the whole club thing.

I haven't made sorbet yet, but I did make cherry vanilla ice cream yesterday. I'll have to give sorbet a go.

Here we still are! We just went over the recipes, now we're getting to the method. Glad to have you




Because the rhubarb is the most involved sorbet I made, let's start with that one.

I started with raw rhubarb, so I had to extract the flavor from the stalks before I could make a simple syrup. To do that, I just put the rhubarb and water in a pot on the stove



and cooked them for about 5 minutes, until all their color has transferred to the water



and then strained them



And then I had some beautiful bright pink rhubarb juice.

Now I have my water and flavoring combined, and I just need to add the sugar and a dash of lemon juice to balance the flavor. I added half a cup of brown sugar and half a cup of white sugar, then began to heat the liquid again.



Once the sugar is dissolved, turn off the heat and let your sorbet-to-be cool.

Rhubarb made it to the Americas via Maine between 1790 and 1800, and in under 20 years it was being sold in produce markets

Then let's get started with the Iced Tea and Lemonade Sorbet!

This one, I made just like I make sweet tea. I boiled sugar and water until the sugar dissolved, and then I added the tea bags and let them steep in the hot sugar water for ~5 minutes.



After removing the tea bags (and wringing out all the extra tea), I added the lemon juice.




Then I waited for the mixture to cool to room temperature before moving it to the freezer.

As rhubarb was originally used only for its root, its petioles (leaf stems) have not always been so large. The large plant stalks resulted from the crossing of different species of rhubarb which were being grown for their roots (interspecies hybrid).

For the lemon ginger sorbet, I shredded and chopped the ginger, and added it with half a cup of water and half a cup of sugar to a pot on the stove.



I boiled it long enough to let the sugar dissolve, and then added the lemon juice and let it cool to room temperature.



Rhubarb requires deep well drained sandy loam to loam soil with a good supply of organic matter. Heavy soils are satisfactory if they are well drained but the structure should be improved with manure or other forms of organic matter, also raised beds may be considered.
