I think it's kind of weird, I'm somewhat traditional so I guess I define sex as involving some sort of penetration, not that oral is meaningless but I consider it a different category, I guess that's just how my mind works...

I believe it is sex depending. For lesbians, it is exchange of bodily fluids so yes. For gay men, penetration is sex. Same for straight couples. But regardless it is a form of sex.

I usually consider it sex. I usually consider ANY penetration to be sex, too. Usually if sexual organs are involved, it's sex to me.

For people saying only penetrative sex counts as sex, what about two people with vulvas who disliked penetration? Would they die virgins even if they spent half of their lives rolling around with vibrating object and tongues together?

I would call it sex, no question. I think of any physical contact that can be described with the word "sex" in its name as sex - manual, oral, vaginal, anal - it's all sex to me.
