So, for those of you who don't already know, this meeting is a special one because it's part Thanksgiving party!

What that means is that in addition to learning about some awesome side dishes and trivia from Antipova, you're also going to get some awesome trivia and prizes from me. I'm going to be randomly interjecting trivia as we go along, so make sure you pay attention to what I'm posting. It may nab you a prize later on!

This meeting, as you've probably already noticed, is going down just a smidge' differently than usual. We're going to have holiday trivia interspersed, even more prizes, and instead of having one big recipe, we'll have four short recipes so everyone can keep track more easily.

Also---because Thanksgiving is an event where everybody gets cooking---I want to hear you all share your cooking stories too. You don't have to do a bunch of prep or take a bunch of pictures, but I'm selfish and I want to learn from you guys. So share your favorite tips, your favorite additions, your favorite way to mash potatoes---all without starting food fights, of course.

Trivia: There are many more varieties of apples in existence than you see on the shelves of your grocery store. Breeding for desired traits can take decades, and the genes of the apples you buy today are the results of many years' devotion. For example, just to minimize one fungus, Venturia inaequalis, the PRI Disease Resistant Apple Breeding Program has sent several attempts for advanced testing: Cultivars (varieties) named by PRI include Prima (1970), Priscilla (1972), Sir Prize (1975), Jonafree (1979), Redfree (1981), Dayton (1988), Williams Pride (1988), Enterprise (1993), GoldRush, (1993), PristineTM, (1994), Scarlett O'HaraTM (2000), SundanceTM (2004), Pixie CrunchTM (2004), and CrimsonCrispTM (2006) .

I brine my turkey for two days in a mixture of salt water, apple juice, red wine, liquid smoke, herbs, and spices. But then I roast it normally.
