I vote for needlework. (I do a ridiculous amount of embroidery.. my rule for myself is that I'm not allowed to watch TV unless I'm working on something.)

One of my dreams is to have a horse. I love horse back riding, but don't get to do it often living in Chicago.

Good luck with that. Rabbits are insanely picky about who they'll tolerate unless they're of opposite genders. Even when they're neutered young.
