I like 'em fried. Epicurious has a good recipe HERE though make sure to use olive oil. Artichokes don't taste the same when fried in vegetable oil.

This is what we're making for dinner tomorrow now. Thanks. Will have to try them on a salad as well, but I feel like that cheapens it.
