So this morning I had this corn/tomato/onion mix and I made scrambled eggs with it and had it on a bagel. It was really tasty, does this interest anyone/has anyone made anything similar?

That sounds really good. Kind of reminds me a little of a southwestern omelet. I don't know that I ever had corn in one, but it wouldn't be out of place.

I make something like that, depends on what I have on hand. I cook onion and pepper then add corn, black beans and shredded chicken breast; season (salt, pepper, chipotle/ancho, cumin) then set aside. Make an omelette, add the southwest mix, salsa and cheese. Or sometimes I just top it with salsa, sour cream and jungle hot sauce. Depends.. I'm a moody cook.

Corn in eggs sounds good. Not sure about the rest though.
I once tried eggs, rice, and soy sauce together along with chicken stock, it was gross all together.

When you mentioned corn, I insistently thought of corn meal. (wouldn't that be dry)lol

The only thing that comes close to that is when my mom will make scrambled eggs with corn tortillas. She would cut the corn tortillas into triangles, then fry them in with the egg. It was actually pretty good.
