Do you have a special recipe for Thanksgiving turkey leftovers?

What do you do with your leftover turkey pieces? I always turn mine into a Curried Fried Rice dish. Since I've roasted a leg of lamb instead of turkey this year, it's going to be an Indian curried fried rice with diced lamb, celery, and onion. Do you have a special recipe - care to share?

This year we took home a little of everything, so there is PLENTY to eat with leftovers.

But I've always made a cranberry open face sandwich, which I guess isn't much but it's still unique to Thanksgiving for me. I rarely have fresh baked turkey just lying around.
This year I also managed to go home with half of a pecan pie, greenbean casserole, stuffing, potatoes, etc.
I plan on bringing the pie to work, since I'm sure my coworkers will love it

The white meat will become sandwiches, cold, hot, open faced with gravy, loaded with the fixings, you name it.
The dark meat becomes turkey pot pie.

Turkey stew - white and dark meat 'shredded', chicken broth, carrots, celery, mushrooms, and frozen egg noodles. Mix up a bit of cornstarch in cold water, add to soup, and it becomes a stew. Maybe throw in some parsley and minced garlic, an onion when we remember to get one. But that's pretty much it; the rest are either for sandwiches, mini-T-day lunches with the other leftovers, and tid-bit treats for the dogs.

My dog and my parents' dogs (they're the parents of my dog - he was their only pup). I'm living with family until I can graduate college and/or get a job ... so the house is a little crowded. But mom appreciates that I'm here to help.

Sandwiches! Which I guess aren't too special... but I always pile on some turkey, add cranberry sauce, maybe some stuffing or green beans if there's any left, stick it in the panini maker and eat it hot. It's delicious!
