#EdenCooks - Beef Stew OR Pho Bo - Mon. Jan 16 at 8pm EST

Welcome to the January Meeting of Eden Cooks! Eden Cooks is a cooking club for any interested members of the Eden community. We will meet on the forum to discuss everything from tips and pointers for less well-equipped kitchens, explanations of cooking terms, and important techniques. There will be a featured recipe each meeting, with pictures taken as I prepare it for you. I will cover some ingredient substitutions to make each recipe more friendly to people with dietary restrictions.


Feeling a little chilly? Don't fret---Eden Cooks has you covered from both sides as winter wears on. We'll be showing you how to make a classic American (and most sorts of northern European) beef stew, and for those who long for a taste of the exotic during these gray days, we'll also be showing how to make the Vietnamese Beef Noodle Soup "Pho Bo." To warm you up, stomach and mood, there's nothing like a nice hot soup or stew---great for making in huge batches to serve to guests, or to freeze for yourself to have multiple lunches on days when you're too busy to cook, beef stew is one of the most classic wintertime meals. Pho, on the other hand, combines several delicious herbs to encourage you to take good, deep breaths even if your nose is a little stuffy. Come on in, enjoy the star anise and the Thai basil---or stay close to home and enjoy the potatoes, carrots, and pepper of an old-fashioned stew.


During the meeting, a $25 gift card will be awarded for the winner of a contest where you guess the lesser known kitchen implement from a series of photos that I take. Another will be given to the winner of a trivia contest from information that I will provide during the meeting.

The meeting will take place on the EdenFantasys forum in this very thread at 8 pm EST on Monday, January 16th. I'm really looking forward to this meeting, so I hope to see you there! I would love to learn cooking Pho Bo, always wonder what the exact ingredients are, to make the soup turn out in that particular flavor!

Awesome! It's one of my favorite soups... although I did mess up the first time I made it at home by deciding to add tripe, and not cooking it separately. It was so bitter, it ruined the whole broth!

Ooh, cool! You're totally welcome to give advice and share how you make it, too---I'm sure there are lots of pitfalls you could help teach us to avoid

Surprised to know you actually eat tripe! The tripe sold at Asian markets are usually cleaned and bleached, and it doesn't have any bitter taste to it.

I'll try to attend this time, but can't say for sure. I'm having a flight late in the night (same day) and I'll need lots of sleep beforehand But I'll try. I love forum gatherings and meetings

It came frozen, and I just added it to the pho frozen. It tasted bitter enough that I wish I had thawed it in a separate pot of boiling water and rinsed it... I couldn't tell you why (It was quite clean, and probably bleached!) but my broth was nowhere near as good after the tripe thawed.

When I was a kid we ate a lot of ramen. We didnt eat too too many home cooked meals it was about half and half. We ate mexican soup a lot. I usually go for just chicken soup because its easy and classic. But I like all sorts of soups. Ive never been too picky of an eater though.

Potato Soup!!! Mmmm, carbs and cream and bacon! If I had nothing but potatoes to live on for the rest of my life, I can honestly say I wouldn't mind.

I also love a good vegetable beef soup and creamy, slightly chunky tomato soup.

It's just good comfort food. When I was a kid, all I wanted was Campbell's condensed chicken noodle. I know better now!

I used to love clam chowder, but not so much anymore. Something about it is gross to me
Now, I love love love tomato soup, especially the tomato and roasted red pepper soup that trader joe's has awesome! I love yummy hearty stew, too, and chicken soup!

For me it was always soup with a lot of rice in it. chicken, celery, carrots, cilantro, rice. But theres fideo which is like beef and really thin wirey noodles with tomato and chicken broth. Mundo or posole. Both are different. We had a lot of soups with like cow heads or weird things like that as a kid too. A lot of mexican familys do a lot soup stuff. There are so many.
