#EdenCooks - Homemade Eggrolls - Mon June 18, 8pm EST

Eggrolls are easy to think of in two steps. First, think of the wrappers. These are really not that hard to make by hand, but they are *super* time consuming. I would honestly recommend just getting your eggroll wrappers from a grocery store or Asian market, because the ones you make by hand are not any different, and it adds a lot of work to the eggroll preparations without really adding any benefit.

So, assuming you're smarter than me and you buy some eggroll wrappers, you need only to consider what you want in your eggrolls.

What are your favorite kinds of eggrolls?

Trivia: Wood ear mushrooms are named because, when growing, they look like ears sprouting out of their host trees.

Boiling sugar can be quite dangerous! It's almost worse than splattering grease.

Antipova - I made a huge batch for Christmas a few years ago. It was a simple recipe but I switched up the milk chocolate for dark and used a different cut of almonds than the recipe called for, it was buttery and rich while still being crunchy.

I like chicken and vegetable eggrolls. Aside from that, not much else matters. Come to think of it, I haven't had too many different types of eggrolls...

I always get veggetable egg rolls. When I have Chinese food I usually get a meat-heavy entree, so a veggie starter makes me feel a little less guilty

I like a "traditional" Chinese take-out egg roll - minced pork, chicken, or shrimp in a mixture of shredded cabbage and carrots with minimal spices other than salt and garlic, fried in peanut oil.

I like chicken often too, if had been cheaper than the pork at the market I went to, I definitely would have made chicken. The only difference is you add some egg white to the cornstarch/sugar/water mixture to make them extra-velvety

So if you're making your eggroll wrappers and filling from scratch, you'll want to start the day before you plan to eat them, or start on a weekend at lunch time in order to eat at dinner. If you're just making the filling, you won't need to spend quite as long preparing, but eggrolls are still an involved dish and you should invite your friends to help, and start a few hours before you plan to eat.

Here are the ingredients you'll need.


Cantonese Eggroll Wrappers
(makes 14)
2 cups flour
1/2 tsp salt
1 egg, beaten lightly
1/2 cup water
cornstarch


Sealing Mixture

1 Tbsp cornstarch
1 egg yolk
2 Tbsp water




Slippery Pork

1 pound Pork
1 tsp sugar
1 Tbsp soy sauce
2 tsp Cornstarch


Garlic butter shrimp

1 pound shrimp
garlic, 3 cloves, chopped
butter, 2 tablespoons


Stir-fryed veggies

8 large dried cloud ear mushrooms, rehydrated
3 cups bean sprouts
cilantro
(your choice of any veggies)
1 tsp cornstarch
1 Tbsp water
1 drizzle sesame oil




Dipping sauce

soy sauce
white vinegar or rice vinegar
cilantro
chili garlic paste

Yeah, not a fan of spring rolls. They're too delicate for me.

How do you usually eat them?

Usually a meal because I prepare huge batches and egg rolls are best eaten when fresh.

Aah! Irene Kuo (my current cooking muse) calls those Shanghai wrappers as opposed to Cantonese wrappers.

For those who want, you can leave the shells on when you cook them, just make sure that you strain them very well and rinse them after you remove the shell.
