Favorite way to cook potatoes

Lame question, I know. But I just got into cooking and I could use some new recipes. Potatoes just confound me. I only know a few way to cook them: cut them up, put some olive oil and rosemary on it, or having baked potatoes, or twice baked potatoes.

Any new recipes?

Creamy Scalloped Smoked Gouda and Cheddar Potatoes.
--5 medium potatoes, sliced thin
--1 small onion, diced
--2 cups smoked gouda cheese, shredded
--1 cup cheddar, shredded
--2 cups milk
--salt, pepper to taste
--2 tsp ranch dip mix

Mix and bake 350 degrees for about 20 minutes. Then:

Place 4 TBS flour in cup and add 1/2 cup milk. Whip with fork until smooth. Add to potatoes. (You may add more of this mix if you want them thicker.)Bake until potatoes are completely soft but not mush. Another 15-20 minutes.

Addiitons:
Ham
Scallions
1/4 cup cream cheese
1/2 cup to 2 cups frozen peas
jar of capers
can artichoke hearts

i make baked potatoes in the microwave.
mashed potatoes


a casserole would be good.
make latkes. latkes are the best food ever i dont even care if youre not jewish.

Cut them up in sticks with a side of approx. 0.5", fry in a pan with onions until golden
