How do you say it?

I say Merry Christmas, but I only say it to people I know well enough to know whether or not they celebrate Christmas.

I ALWAYS say "Happy Holidays". You don't always know what the person you're talking to celebrates and it's excluding to say something like "Merry Christmas". They may not celebrate Christmas and you're being rude by making them feel uncomfortable in this situation. So "Happy Holidays" is perfect to use in every occasion around this time of year. You might say something more excluding if you know beyond a shadow of a doubt that someone celebrates Christmas, Hanukkah, or the like.

Happy Holidays if I don't know what people are celebrating (did that when I was working retail). I would wish them a Merry Christmas in the few days before Christmas though. Anybody I know doesn't do Christmas gets "happy holidays," and I say Merry Christmas to my friends and other people I know celebrate. After Christmas, I say "happy new year."
