National Fried Chicken Day/

Did you know in America almost every single day out of the year is a food holiday? Today is "National Fried Chicken Day" . . . July food holidays! . . . although it was kind of fun to see what food holiday my birthday is, (National Cheesecake Day!) I think it's a little ridiculous that just about everyday is a food holiday. Isn't America unhealthy enough as is, do we really need to have food holidays daily? What do you think?

It does sound silly considering most of the world is over weight. But I do love chicken!

IMO, one can eat nearly anything in moderation. A piece or two of fried chicken every month or two isn't gluttony, its yummy.

I may make it for dinner, its been a while since we've had it. I don't deep fry it, I Southern Fry it, roll it in self-rising flour, to which a little extra salt and a pinch of sugar (for browning) has been added, then into a dish of beaten eggs, with BBQ sauce for flavor (because I don't like hot sauce) then back into the self-rising flour, to which I have now added dehydrated onion and some herbs, then rest for a few minutes. I use canola oil, with a little butter (for flavor, as its the only dairy product in my house that I ever eat) about deep enough to not quite cover the chicken when each piece is laying down. The secret is to get the oil VERY hot, so the food doesn't absorb the oil. If you get the oil hot enough, a crust will be formed immediately and virtually NO oil will be absorbed into the food.

Fry until brown on one side, turn, then fry until brown again. If any tops of legs etc aren't brown, hold them in place with tongs in the oil until brown. THEN place into a preheated 350 degree oven to complete the cooking. About 40 minutes or less later (register 180 degrees) serve with whatever works for you.

Hmmm, if I make fried chicken tonight, I'll probably increase my odds of getting laid. hee hee hee hee.

I wish I hadn't read your post, P'Gell. Now I NEED fried chicken!

I wonder when all of these food holidays were made official. Maybe it happened before obesity became a recognized problem? In any case, I think fried chicken deserves its own day. For that matter, so does cheesecake...

Compared to fried chicken by birthday food is chopped liver. My husband's birthday food is so-so.

I wonder who came up with this list because national Ice Cream day in December seems silly to me.

I think they're kinda silly since, ultimately, one doesn't get much from these official days. But it's still fun to think about them. It would be neat to plan a meal each week after one of that week's food days.

I'm June 15, which is National Lobster Day. I really MUST require lobster at my next birthday dinner! Or perhaps a trip to Boston for a lobster roll... mmmmmm...

But, really, I hope you enjoy the recipe. I'm not one to keep good food preparation techniques to myself. This is the best fried chicken I have ever eaten. I have Paula Deen to thank for the suggestion of self rising flour, as the baking powder in the flour gives the outside a wonderful PUFF! The egg is essential. What you add to the egg a tsp or so of BBQ sauce or a few drops of hot sauce or Worcestershire is up to you. The dehydrated onion on the second run through the flour works better than fresh onion, which is too wet to work.

Also, cooking it in the oven until it is finished after it has browned reduces the amount of time it is exposed to oil, so I think its better for you that way. THAT tip did not come from Paula Deen.

I don't eat actual chicken, I'm vegetarian. However, I do eat chik'n. lol. It's a vegetarian alternative and can be prepared the same as chicken so I may try it. It does sound tasty!

Awh . . . sorry about not getting laid. Slap some cuffs on him and drag him to the bedroom! ;]
