Choosing just one would be difficult. There are many I have yet to see, but I've watched Howl's Moving Castle a number of times, which only happens if I really enjoy a film.
I wouldn't mind finding and reading the original book by Diana Wynne Jones, either.

It's a pretty close call between Howl's Moving Castle and Spirited Away. They're both on my list of best movies of all time.
Totoro is fantastic as well, but sort of in a different category than the others.

Spirited Away. It's the cutest and the movie has more personality than Howl's Moving Castle. I read the book (HMC) but I just can't enjoy it as much as Spirited Away.
