Help with my muffin recipe? Making NOW

2c flour
1/2c brown sugar
1T powder
1t soda
1/2t salt
3/4c dairy free chips
2c about 4 large mashed bananas
1/2c mix of melted margarine and applesauce
1/4c soy milk
4 egg whites
1t vanilla
preheat over to 375. Line cups with cupcake liners. It makes more than 12 regular muffins. I made 12 regular and a bunch of mini or you could make large. Just remember to fill not quite full.
In a large bowl mix dry ingredients. In a medium bowl mix bananas, marg/applesauce, eggs, vanilla, milk. Add to flour mixture until just combined. Bake until pick comes out clean. the time will depend on the muffin size. Chocolate frosting is good on these but not really IBS wise.


is that supposed to be 1 Tablespoon of baking powder? I don't have muffin or cupcake pans..I have a shallow heart shapped cake pan or a bread pan that you'd make banana bread in or somethin...wat should I use? oh and I have rice milk origional flavor and almond milk vanilla flavored don't have soy at home..

My guess is that it would be a Tablespoon, but i'm not positive on that. You can use either pan you like, just make sure it isnt much over 3/4 filled. I think you will be ok using the rice milk instead of soy. let us know how it turns out Good luck!

Yes, tablespoon of baking powder (make sure you even out the top of the spoon).

If you're going to use the vanilla-flavored almond milk, you can omit the vanilla from the recipe.

I always use loaf pans when making muffins since I don't have a muffin tin. Just remember to add a bit more time and to test in the middle of the bread.

Sure its not 1teaspoon of baking powder? does that sound like a lot? maybe 1 teaspoon RRR don't want to mess this up!!!

Yes capitol T would mean tablespoon, a lower case t would mean teaspoon. A tablespoon sounds like a normal amount of baking powder for a muffin recipe.

well, I feel for you because I have a colonoscopy and endoscopy this week and I have a feeling after the results I will be on a completely different diet. But, i'm glad the muffins turned out ok
