Tomatoes and Beef, over spaghetti squash

Trying a new spaghetti squash recipe with Beef and Tomatoes.

Getting to be fall, just harvested my bumper crop of AWESOME cherry and BIG beefsteak tomatoes.

Anyone have any GREAT recipes for cooking with my luscious tomatoes before they go bad???

I've always been partial to a tomato-mozzarella salad - cut tomatoes into bit-size chunks, toss with torn strips of a few fresh basil leaves, freshly shredded or sliced mozzarella cheese, and topped with a zesty Italian dressing.

I looooooove spaghetti squash! Angelica, you can truly just use it the way you would use actual spaghetti pasta. Sometimes I make a rich sauce like Bignuf might be doing with meat + tomatoes. But I also like to just bake it, string out the squash with a fork, sprinkle it with a little garlic and parm, and enjoy.

To prepare it, all you need to do is cut it in half, place it cut sides down on a baking sheet, pour in just a little water, and put it in the oven on around 400* for about half an hour. When you can easily pierce the flesh with a fork and it starts to pull away in strands, then it's done.

I would suggest pico de gallo, margherita pizza or BLTs!

LOVE Caprese salads too! I like fresh buffalo mozzarella, it's so much softer than regular mozzarella. Have you tried it with Balsamic Vinegar poured over? I think I might run over to Italian Oven and have one today. Hungry!!

I have a chunky tomato soup recipe if you would like it! It's my favorite fall soup.

About 2 cups of chopped up tomatoes including the tomato juice.
1/2 pint of whipping cream
1 med onion chopped
1 tbls of butter
1 tsp of basil

Mix together and simmer for about an hour!

Taste great with grilled cheeses

Go to Recipes.Com. AWESOME source of recipes for everything. Spaghetti squash is DELICIOUS, NUTRITIOUS (even just cooked with some butter on it) and FILLING...Great stuff.
