I love vegetables, I eat more of them then fruit. My favoritest is cucumbers. Of course I have to giggle like a school girl when I pick one and I am touching all of them, trying to find the biggest one. And my hubby is laughing at me too, but I do not use my cucumber like that.

I am with you Ash Cauliflower is awesome.

I love all sorts of beans. I made some adzuki bean paste recently and put it in steamed buns. Mmm~

That being said, there aren't many vegetables I don't like. If herbs count, I cannot stand arugula, but I have read that it may be genetic. Go figure!

Sounds like a good salad. I love Spinach the best then cucumbers, but eat several of those in my salads.

I eat lettuce the most, but that's only because I have salads a lot. It's not my favourite though, just the one that I eat the most of. I think I basically love all veggies!
