Well, what does your wife like?
Suggesting a candlelit dinner is silly if she would rather just go backpacking or something.
Think of her favorite activities, and make them into a fun date or day-long activity. Something some of my friends have done is a couple's scavenger hunt that leads their partner through various memories.
