I look at the head and see that this specific glass dildo has a bit of a nub at the top with slanted sides. I've personally never used a dildo like this, and I wanted to know if you could possibly stimulate the g-spot?

It's made to stimulate the G-spot, but that doesn't mean it actually will. I'd choose a toy with a more extreme curve if you want to target your G.
