I've never actually been to the store and purchased lube. How do I know which one to use (water based, etc) or what brand?
How do I know which is the right lube to use?

If you use silicone toys, get water based lube. It's just easier to remember than getting a silicone lube for some toys and then another water based lube for the silicone toys.
Brand wise, it depends on preferences and sensitivity to ingredients. I use Sliquid because I have issues with Glycerin and parabens. If you have Glycerin issues but not paraben issues, Pink Water is a nice lube. I've also heard good things about the JO lubes, but I never had luck with them.
Back when I used silicone lubes, I used to love WET Platinum for sex. It lasted forever.
