I actually found quite a few firm silicone dildos that have an insertable length of 7 inches, but they differ in circumference. What circumference are you looking for?
You mentioned that you've played with soft, realistic toys, what kind? Dual density Vixskin? Tantus O2? Or something even softer?
I'm just trying to get an idea of the firmness of the toys you've played with so that I can recommend something firmer.

All three of those have an insertable length close to 7 inches and are no bigger than 2" in diameter. They are dual density silicone, so they have a firm inner core and a soft, squishy outer core. I think the squishy outer core will give you the realistic feel you enjoy. The other reason why I recommend Tantus O2 is because it's firm inner core gives it rigidity and I think it will hold up well to riding.
