I love all sorts of cookies, chocolate chip being my favorite. However i discovered a nice Chinese Almond Cookie recipe but unfortunately I cannot find it anymore. I have it buried somewhere and I need to find it. But they are super delicious with a nice short bread like texture with cloves and 3 different ingredients of almonds. If i remember right, finely chopped almonds go into the mix, along with an all natural almond emulsion, and then slivers of almonds on top. Ill try find the recipe and post it here.
