I absolutely LOVE pasta salad! My favorite is saving the marinade from artichoke hearts and mixing it with olive oil, black pepper, lemon and vinegar for the sauce, then adding tiny diced white onion, lots of olives, the artichoke hearts and fresh parsley, maybe a bit of feta and blanched spinach if we have it.

Most pasta salad that I've had is made with an Italian dressing or other vinaigrette.
