While your gingerbread chills (or another, sunnier day...), get out your powdered sugar and some soft butter and get mixing your Lemon Zest cookies!

First, just cream the butter together with the powdered sugar.



When you are successful, it will look like this:

Add the flour, mix, and add in your lemon zest.





Pack it tightly and cover it, and place it in the refrigerator too.



California produces more retail fresh fruit, while Florida produces more retail juice.

The first time I was making this cookie combo, I said to myself, okay, I'm sitting here with two skinned lemons. And lemons don't keep very well once you strip them of their waxy outer layer, and they shrivel up and lose their juice. So how to make use of lemon?

Some of my friends have been on a quest lately to find a cocktail that looks classy but isn't too overpoweringly sweet. Trying to help them find a good one, I stumbled on the Sidecar, which is a classic cocktail featuring brandy and lemon juice. I like it a lot, so it's a great use for your leftover lemons.

And if you do prefer it sweeter, just add some simple syrup, nobody's going to blame you

Pectin in citrus fruits is easily extractable---it is often used in commercial applications (like thickening jams, and making medicines more easy for the body to absorb.)

To make a Sidecar for one person, pour up two ounces of brandy of your choice. Of course you're making your gingerbread house with friends or family, so multiply this recipe by the number of people you have who are of age to enjoy alcohol. A typical jigger or shot glass is 1.5 ounces, if you are a strong drinker you can just use 3 oz.



Add to the glass one ounce of orange liqueur (I've got Grand Mariner because I was making a Julia-Childs-style souffle not too long ago. ) If you used a double-shot of brandy, use one shot of orange liqueur.



Finally, squeeze your lemons out into your measuring jigger, and get one ounce. (For the strong version, again, 1.5oz).




Earl Grey tea is prepared by introducing the essential oils of the Bergamot, a citrus, to black tea.

I envision a whole line of sex-toy inspired cooking utensils in the "Party Gifts and Favors" section. Or maybe there would have to be a new category for them.

Pour it up into a martini glass



And create a lemon zest twist. This uses the other part of your zester, to make a long peel strip, and then twist it around your finger to help it hold shape.
