Now pull your gingerbread dough from the fridge, and begin rolling it out.



If you have a gingerbread house pattern, make sure your dough is large enough to accommodate all the pieces. (Don't forget a base!)



Bake for 30-40 minutes in your 300F oven, then remove.

Before the cookie cools, cut out your shapes with a sharp knife. Or, if you already built your gingerbread house and are just making some cookies, with a cookie cutter!

Once you pull the gingerbread out of the oven, nudge the temperature up to 350F. After cutting the gingerbread, take your lemon zest cookie dough out of the fridge, roll it out, and cut it into little circle shapes using a small cup.

Place the circles on a baking tray and bake for 10-12 minutes. These cookies are quite dry and bake up quickly.

I'm going to put both cookie icing in the same post, because they are so similar.

The basic cookie icing is made with milk and powdered sugar, mixed to the consistency you prefer. If you want a very thing icing that you can drizzle in a pretty pattern, add more milk. If you want a thicker icing that you will spread on (like for the lemon zest sandwich cookies), use less milk.

But for the lemon zest, we want the icing to taste lemony. So instead of milk, use lemon juice. (You didn't drink it all, right?) I used a half-cup of powdered sugar and the juice of just under half a lemon. I also mixed in some minced lemon zest.




For the gingerbread, your icing is part for flavor, but part for mortar! So instead of milk, use egg whites.

A good ratio to start out with is one egg white to one cup of powdered sugar, but eggs come in all different sizes, so trust your judgement more than you trust that ratio!
