Tip Time!

When you’re buying fresh fish, what should you be looking for?

If you’re buying fillets, like we used in the recipe, you should look for:

1. That the flesh is smooth and doesn’t seem to be separating from itself
2. There should not be any discoloration
3. When you firmly touch the fillet, the indentation from your finger should “bounce back”
4. MOST IMPORTANTLY: The fish should not smell “fishy”!
