I have one of the flat ceramic cook tops, and it's not too bad. The regular electric ranges are horrible. I wish we could get gas where we live, but that's not an option unless we spent thousands of dollars on a tank + laying pipe.

My apartment now has a ceramic top electric range... I like it more than coils because it's easy to clean but it's still a pain to actually cook.

The next step is to scatter the remaining tomatoes, olives, and artichokes over the fish, along with the feta and the capers. Drizzle on the olive oil and the white wine then put into the oven until the fish is cooked through (gone entirely white through to the center when you pull the fish open with a couple of forks) and the feta has browned on top.

Fun Fact: Did you know that flounder, when young looks the same as most other fishes, but as they mature one of their eyes will migrate across its face to the other side; allowing for the fish to lay flat on the bottom of the ocean, and still see with both eyes.

When I suffered through a six month lease on a place with an electric range, I honestly considered buying camping butane. I think I cooked on the grill on the porch more often than on the range itself.

It did have a griddle-half, though, and I will admit that that was pretty awesome for making flatbread every morning.

Does this "fun fact" apply to halibut too? Are they similar?

I didn't know that about flounders. But honestly, every time I see/hear "flounder" I start singing "Under The Sea" lol

Yup. They are both flatfishes in the family Pleuronectidae. There are a few flounders in another family as well. Pleuronectidae are right-eye flounders, meaning they lay on their left side. The other family is left-eye flounders, which lie on their right.

It was about 20 minutes at 375, but the cooking time varies on the thickness of the fish fillets that you're using.
